Cheesecake filled Strawberries


These strawberries are latest Pintrest craze so I thought I would give them a try.

And it was not another Pintrest fail!!

Wooo!!

Here is what you will need:


Strawberries, 8oz cream cheese, 1/2 cup of powdered sugar, 1 teaspoon of vanilla and graham crackers (crushed).

First cut off the stem of your strawberry


Then using a knife very carefully hollow out the instead of the strawberry.

Don't worry it took me awhile to get this right.



Then pour your powdered sugar, vanilla, and cream cheese in a bowl and mix it together.



Then using a measuring spoon pour into your strawberry!


And then crush some graham cracker up and sprinkle over top.


Then repeat for as many strawberries as you would like!

Or... if you get lazy you can always improvise a little.


I ate one too many of these...

Malibu Chicken


This is an amazing piece of chicken. Seriously. 

We couldn't believe how tasty it was.

Here is what you will need:


2 chicken breasts, 3 eggs. 3 cloves garlic, 1 cup bread crumbs, 1 cup parmesan cheese, 1 tablespoon of garlic powder, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 4 pieces of ham, 4 slices of swiss cheese.

For the sauce you will need 2 tablespoons of dijon mustard, 3 tablespoons mayo, 1 teaspoon of yellows mustard, 1 teaspoon of honey.

Preheat the oven to 350.

Separate the egg yolk from the egg. Combine with minced garlic in a bowl.


Pour half in to a plastic bag and add chicken.

Mix it around so it is coated with the mixture.

Do the same for the other breast.


Put the bags in the fridge for FOUR hours.

After the chicken has been marinating, mix bread crumbs, parmesan cheese, garlic powder, and salt and pepper.


Mix together and spread evenly on the bottom of a 9 x 13 pan


Get your chicken out and place in pan. Rub it around a little and coat the entire chicken in the bread crumbs.



Put them in the oven for 40 to 60 minutes. Mine took around 50 minutes to cook.

While it is cooking mi together the sauce.


I ended up putting a little extra honey because the sauce was a little too mustardy for my taste.

Mix it together and put in the the fridge.

When your chicken is cooked, take it out and place the ham and cheese on top of it.



Then put them back in the oven for a couple minutes. Until the cheese is melted.




Then add the sauce on the side to serve as a dipping sauce!

Cheesy Potato Casserole


Super easy, super classic side dish.

It doesn't take much work or time.

Here is what you will need:


About 3/4 of a bag of frozen hashbrowns, 2 cups of sour cream, 1 can of cream of chicken soup, 2 teaspoons of onion powder, 2 cups of shredded cheese, 2 cups of corn flakes, 2 tablespoons of butter, and salt and pepper.

Preheat oven to 350.

Combine sour cream, cream of chicken soup, onion powder, cheese and salt and pepper.


And mix it together


Add hashbrowns


Then spread it evenly in a 9 x13 baking dish. Make sure it is all mixed in.


Then melt butter and add corn flakes to the bowl.


Mix it together, crushing the cornflakes are you go.


Then spread evenly over the casserole.


Put it in the oven for 40 minutes.

When you take it out, it will pretty much look the same as when you put it in.


See?

But it will be nice and bubbly so you will know it is done.

Juicy Burgers with Copycat In-n-out Sauce


I grew up on in-n-out.

Almost any major life event was accompanied with a meal from there.

I even debated going there on my wedding day.

But decided against that...

Which was a good idea since I could barely eat anything that day.

But this recipe is almost as good as having the real thing. 

Almost.

These burgers though- melt in your mouth.

Here is what you need:


2 pounds ground beef, one egg (beaten), 3/4 cup dried bread crumbs, 3 tablespoons evaporated milk, 2 tablespoons worcestershire sauce, 1/8 teaspoon of hamburger seasoning, and one clove of garlic minced.

Combine all of it in a bowl.


Then using your hands mix it all together.


Then separate it into EIGHT pattys.


(I halved the recipe and only made four)

Then put them on the grill at high heat!


The cook for about 5 minutes on each side.

While those are cooking mix up the sauce.

Here is what you need:


1/2 cup of mayo, 2 tablespoons of ketchup, 2 teaspoons of relish, 2 teaspoons of sugar, 1 tablespoon of white vinegar, and 1 teaspoon of onion powder.

Okay this is not as good as the real thing because nothing is.

But after years of searching, this is the closest I have come.

Put them in a bowl.


And mix it together!


Set aside and check on your burgers,


Or the babe in the wife b cooking them,


Once they are almost done add some cheese


Let the cheese melt and toast your buns!


After a minute remove from the grill.


How good do those look? DYING.

Combine the bun, burger, sauce, and any other fixing you like.
