Broccoli Chicken Braid


Hello my faithful readers!!

Sorry I have been MIA for a bit! Scott and I drove down to San Diego for the fourth of july (if you want to read about it you can here) and then I went to a family reunion up in Bear Lake while Scott came back to Arizona and worked hard. 

I loved spending time with my family, especially the ones I don't get to see very often), but I am happy to be back home with my hubby and to be cooking again!

Here is what you will need:


2 cups of chopped and cooked chicken, 2 cups of cooked and chopped broccoli, 2 cups of cheddar cheese, 2 cans of crescent rolls, 1/2 cup of mayo, and one egg yolk.

And note the beautiful flowers that were waiting for me after our week apart.

He is the best.

Preheat the oven to 375 degrees

Cook and cut your chicken up and place it in a bowl.


Then add broccoli, mayo and cheese.


and mix it together


Then take the crescent rolls and spread both cans length ways to form a long rectangle. Pinch the middle together so it forms a single layer of dough. 

Scoop the chicken mixture over the center of the dough to form somewhat of a log shape. 



Using a sharp knife or scissors, cut one inch strips of the dough on each side. 

Then fold the strips over the top of the chicken mixture, alternating left to right, creating a braid. 


Make sure to press the strips together to seal it up as you go. 




Continue until all the chicken is covered.


Then take the yolk from your egg, and brush it over the braid.


Then pop it in the oven for 20 minutes.

It is done when it is nice and browned on top.




Cut it up and dig in!

Honey Bacon Wrapped Chicken


This is SO EASY and so delicious. 

We ate them so fast you know next time I will definitely be doubling... not tripling the recipe...

Here is what you will need:


1 chicken breast, bacon (as many strips as you want), 3 tablespoon of honey, 2 tablespoons of dijon mustard, salt and pepper.

Preheat oven to 350

Cut up the chicken into cubes.


Then wrap each piece in your bacon. I ended up using one piece of bacon per piece of chicken.

I recommend doing that. Don't skimp.



Mix together your honey and mustard.



Then using a brush, coat the top of your bacon.


Put in the oven for 12 minutes, or until bacon is crispy.

Take out, flip the chicken upside down and coat the other side with the mustard.


Put them back in the oven for 12 minutes.

Or until the bacon is crispy

Sweet Corn


If you are looking for an easy recipe to dress up your usual side of corn this is it!

Here is what you will need:


16oz of frozen corn, 3/4 cup of milk, 1 egg, 4 tablespoons of melted butter, 1 tablespoon sugar, 1 tablespoon of flour, salt and pepper.

Preheat the oven to 350 degrees.

Combine all the ingredients in a large bowl.


Mix together. Mix it well.



And then pour it into a 9 x 13 baking dish.


Bake for 45-50 minutes.


And serve hot!

Bacon Cheddar Deviled Eggs


So I never ate deviled eggs growing up. I actually don't think I had my first one until last Christmas with my in-laws.

Scott on the other on has been craving them for a looong time.

So I got a recipe from his sister to make some, which turned out great.

But I found this spinoff and I decided to make a few of these too!

Here is what you will need:


12 eggs, 2 cups of mayo, 2 tablespoons of shredded cheese, 1 tablespoon of mustard, and 4 slices of bacon.

First boil your eggs.


Then remove the shell and cut in half.



Make sure to get all the shell off.

As you can see from this picture, I may have missed a few little pieces... whoops.

Remove the yolk and mash it up in a bowl.

Then add everything besides the bacon.


Mix together and transfer back into the hollowed out egg.


Cook your bacon and then cut it up and place on top.



And that's it!

Brown Sugar Sweet Potatoes


We bought some sweet potatoes over the weekend to make some fries for a BBQ we had and found ourselves with some extras. So the other day I looked through our pantry and pulled together this little sweet treat.

Here is what you will need:



1 or 2 sweet potatoes, 2 teaspoons of cinnamon, 2 tablespoons of honey, 1 tablespoon brown sugar, 2 tablespoons of olive oil, 1/2 teaspoon of salt and 1 /4 teaspoon of pepper.

Those are estimations. I sort of just played with how much of what to put in until I got a taste that I liked.

Preheat the oven to 375

Put everything besides the potatoes in a bowl.


Mix it together and set aside.

Peel and chop your sweet potato up.


Then dip the potatoes in the mixture, coating each side.



Repeat for all the cubes



Put them in for 30 minutes or until soft.



Scoop them out and eat them hot!


And while watching New Girl of course...
