Since we are away from home this summer, we had to basically start over with grocery shopping.
We were tasked with the challenge of not buying anything we won't finish by the end of summer.
We bought a giant package of ritz crackers from Costco.
So forgive me from using them in a recipe every now and then in attempt to get rid of them.
Here is what you will need:
One pound of pork tenderloin, two eggs, a sleeve of ritz crackers, 1 tablespoon of dijon mustard, 1 teaspoon garlic powder, salt and canola oil.
First you need to butterfly your pork. If you (like me) had no idea how to go about this watch this awesome video that walks you through how to do that.
Then cut it into four equal pieces.
Then layer your meat between sheets of plastic and use a meat mallet to pound the pork to 1/4 inch thick.
Or if you have limited resources like me, you can use a plastic bag and the bottom of your mustard! Woooo.
Season with salt (and pepper if you would like).
Once that is completed to all four pieces of meat, get your eggs and add them to a bowl.
Then add your mustard and garlic powder.
Whisk together and then crush up your ritz crackers in a separate bowl.
Heat up a 1/4 inch of oil in your skillet and then take one piece of pork and dip in the mustard mixture, on both sides, then in the crackers.
Place on the skillet.
Let it cook for about 5 minutes and then flip.
Cook for another 5 minutes and then remove from the pan.
You know it is done when it is golden on both sides. You can always cut through and make sure it is cooked all the way through to see if you need to cook the next slices for longer.
Serve on its own or in a bun,
