I wasn't exactly sure what recipe I should post as my first official post on this blog.
Pressure right?
Anyways I have always been a huge fan of Alfredo pasta. When I was little i used to call it "white pasta." It has become a staple in my cooking repertoire so when I found this recipe I had to try it.
It is super easy and SO GOOD. You won't regret making this. And I paired it with some delicious (once again) easy garlic bread. The two go together like mashed and potatoes.
Alright time to get down to business. For the pasta here is what you will need:
One box of fettuccine pasta, 1/2 cup of frozen shrimp, 1 clove of garlic, 2 tomatoes (diced), package of mushrooms, package of frozen peas, jar of alfredo sauce (usually 15oz), parmesan cheese (a couple handfuls), salt, and olive oil.
(don't mind my makeshift meal calendar in the back... why yes we did have alfredo dishes two nights this week)
Get the water boiling/pasta cooking and then get your garlic, tomato, and mushrroms

Anyways- chop them up! Then take the garlic, mushrooms, and 3 tablespoons of olive oil and put them in a skillet. And cook them for about 3 minutes.
Once that is done, add the shrimp, tomatoes, alfredo sauce, and peas.
Side note- This is my absolute favorite brand of alfredo sauce. Haven't found anything that beats it yet.
Now dump all of that in with your garlic. mushrooms, and olive oil mixture and stir it in.

Now let that sit for awhile. Stir occasionally. We just want it to get nice and hot and get the shrimp cooked. After about 5 to 6 minutes lower the heat so it stays warm
Now time to get started on the bread! Here is what you will need-
One stick of butter (I usually get this out about an hour before I stat cooking so it can soften up a bit), 1/2 cup of mayo, cheddar and parmesan cheese (as much or as little as you like- I usually use about a cup of each- I like my cheese). a clove of garlic, and french bread.
Preheat the oven to 450 degrees.
First, measure out your mayonnaise into a bowl. Then add cheese and mix it all together.
Set it aside for now. You can also make this in advance and store it in the fridge. That makes it taste even better.
Take your bread and cut it into fourths. Take 1/4 of your stick of butter and melt it on your skillet. Wait until it is almost completely melted and add in some of your garlic and stir it around a bit. Then take your bread and put it face down on the skillet.
Let it sit for about a minute or two. Feel free to move it around so it can really soak everything up! then remove, and repeat for each slice. Don't forget to keep adding more butter and garlic.
Word to the wise- Don't leave garlic in the pan for more than one piece of bread. It will start to burn. Not good.
Lay each of your toasted pieces of bread on a cookie sheet (don't forget to pam!) and spread the cheesy mixture evenly on each slice.
Then pop these babies in the oven for 10 minutes.
Remember that pasta we were making? Well by now the sauce should be done. The flavors have fallen in love and mixed together and the shrimp is cooked all the way through.
Remove form heat and dump it on your pasta. Mix it together.Add in parmesan cheese, salt and pepper to taste.
YUM.
Then take your bread out.
Pair the two together and you have a mighty fine meal.
